A Taste of Tradition: Cooking in Alabama

Alabama, America’s 22nd state, is influenced by Creole cooking.  Creole cooking is handed down by the original Spanish and French colonists, called Creoles, who lived there long ago.  Okra is a key ingredient in many Creole dishes, and is not surprisingly, found in our first recipe.  Come along with us as we begin in Alabama to cook our way across the USA.

Alabama’s diverse culinary scene reflects the state’s history and culture. Visitors to Alabama can experience a range of food options, from traditional southern comfort food to contemporary fusion cuisine. The state’s culinary treasures include fried chicken, barbecue, biscuits, and grits, which are staples of southern cuisine. Alabama is also known for its fresh seafood, including oysters, shrimp, and crawfish, which are commonly used in Creole cooking. With its unique flavors, spices, and ingredients blend, Alabama’s culinary scene is a must-try for food lovers and travelers.

Quick Gumbo Soup from Alabama

Quick Gumbo Soup

Quick Gumbo Soup is easy enough for even a 9-year-old to make.  A printable version of the recipe can be found here.

 Makes 4-6 Servings.

This recipe came from the 1976 book “The Kid’s 50 State Cookbook” by Aileen Paul.

rice, beef broth, canned tomatoes, okra, hot sauce

Ingredients

  • 1 can (11 oz.) beef broth
  • 1/4 cup uncooked rice
  • 1 cup okra (fresh, frozen, or canned)
  • 1 can (1lb. tomatoes)
  • salt and pepper
  • 2 or 3 drops of hot sauce

Directions:

  1. Open a can of beef broth and pour into a large pot. Add 1/2 can of water instead of 1 can as directed on the label.
  2. Place on medium heat and bring to a boil. Add rice and lower heat.
  3. Add okra and tomatoes. (If okra is fresh, wash and cut into 1/2 inch pieces first.) Bring to a boil again, lower heat, and cook for 30 min.
  4. Salt and pepper to taste. Add 2 or 3 drops of hot sauce. You can also add in cooked chicken, smoked sausage, or shrimp if you like.
  5. Serve in bowls and enjoy.

Everyone in our family really enjoyed Quick Gumbo Soup.  It is like bringing a taste of Alabama into our own home without ever having to pack a bag.

Peanut Coconut Jewels

Alabama is one of the leading sources of peanuts in the US.  Each year the National Peanut Festival is held at Dothan, Alabama and features a recipe contest.  Peanut Coconut Jewels is a favorite recipe for Alabama. A printable version of the recipe can be found here.

Peanut Coconut Jewels

Makes about 36 small candies.

Ingredients

  • 1 cup peanut butter
  • 1/2 cup honey
  • 1 cup seedless raisins
  • 1 teaspoon vanilla
  • 1 1/2 cups prepared flaked coconut

Substitutions

  • You can also use dried cranberries in place of raisins if you prefer.

Directions:

  1. Measure and spoon peanut butter, honey, raisins, and vanilla into bowl. Mix thoroughly.
  2. Measure coconut and spread on wax paper.
  3. Drop spoonfuls of peanut butter on coconut and roll lightly with finger tips to coat.
  4. Place in refrigerator to chill.
